OL.MA. - Collegio Toscano Degli Olivicoltori

Ol.Ma, one of the greatest realities in Tuscany, works in harmony with the surrounding territory, the beautiful Maremma in the province of Grosseto and perfectly reflects its history, culture and vitality, as confirmed by the 1250 associates olive farmers of Grosseto who entrust with Ol.Ma.

It was founded in 1969 as Collegio Toscano degli Olivicoltori and the old Madonnino oil mill was the first step of what would later become a world-wide famous cooperative, appreciated for its respect to tradition through all phases of the entire spinneret. It was the very first in Tuscany that trusted and invested in the modern processing technologies around the early '70s by purchasing the first continuous plant that constantly improved over the years. Ol.Ma nowadays is keeping 6 cutting edge Pieralisi lines.

“It’s been hard, in the beginning, to convince associates and local farmers about the importance of a technologically advanced processing system while the fragrance and the taste of the extracted olive oil were different from those obtained by the traditional way; but we were trustful and we managed to convince also the others. From almost 450 associates in the early 60’s - states proudly the Chairman of the cooperative society, Mr Massimo Neri - we are up to 1250 farmers who bring their own olives to our mill”. Ol.Ma processes only the olives of the province of Grosseto which are provided by the associates, and furthermore commercialises of what advances.
The harvest is hand picked, and the extraction takes place always within 24 hours. OI.Ma is one of the few societies which applies a full tracing policy. In fact each harvest is singularly picked, analysed, preserved and marked with an unchangeable code-number till it gets on the consumer’s table. So, every oil bottle brings on its label the original production code, so that the consumer may find out the actual producer, the harvesting period, the extraction date and the organoleptic properties.

“We have chosen Pieralisi technologies that are respectful of our tradition as well as capable of guaranteeing the best quality for our extra virgin olive oil, which is well known to the whole world”, those are the exact words of the Chairman of the company that make us proud to be part of an important project such as the Ol.Ma one. Currently, OlMa owns six complete plants signed by Pieralisi, 4 of which are equipped with Molinova Genious kneading group, Vanguard centrifugal extractor, Valente separator, Optima washing groups with “Mr Cip” and 4 Bravo centrifugal separator. The rest two plants differ on the use of the Panorama Genius kneaders and the Elephant extractors.

Ol.Ma is part of the Consortium committed on preserving the quality of the IGP Tuscan Extra Virgin Olive oil and its excellence olive oil is commercialised not only in Italy but also in the USA, Holland, Australia, Denmark, Lithuania, Russia, U.K, Finland, Sweden, Kazakhstan, Estonia, Japan, and Germany.
