In particular, the dairy factory represents the perfect combination between the ancient mountain traditions and the most modern technologies that enable the constant monitoring of the milk processing and ensure strict application of all hygiene regulations.

The Cooperativa Alpe del Garda has a Pieralisi complete turnkey system that includes all the reception of milk at the dairy factory with isolated and refrigerated tanks of 10,000 liters each, a Pieralisi centrifuge mod.MCS5 combined with a Pieralisi pasteurizer mod. PC70 / 4. Pieralisi also provided to the cheese production area 2 circular cheese vats dedicated to the hard and semihard cheese (Formaggella di Tremosine).
The whole production process is handled by a PLC control panel that, depending on the setted recipe, is able to manage all the parameters such as temperature and time to obtain the desired cheese.
Also the centrifuge to skimming the whey after the crud processing is Pieralisi, a skimmer mod. SV30.
