FOIS COMPANY: A STORY OF EXCELLENCE IN OLIVE OIL PRODUCTION

In the Sassari area, North-east of Sardinia, on a roughly 43,000 sf land and with over 200 hectare of terrain, was born Azienda Agricola Giuseppe Fois, bound to the olive from four generations. The experience and passion brought the Fois family to follow personally all the different steps of harvesting, treatment and transformation of the olives, being able to produce the fine fruity extra virgin olive oil of the Accademia Olearia of Giuseppe Fois.

The olive trees of the estate are about 25,000 with a prevalence of cultivar Bosana. At the same time tough, in order to enrich the organoleptic characteristics of the oils, the company mixes other national and autochthon crops.

The olives collection is made exclusively from the tree. They start in October and continue until the end of December; then, within 6 hours from collecting, the olives are grinded. A constant control of the duration of the kneading, the extraction and the treatment, never over 27°C, guarantees food safety and quality of the product, characterized by a fruity and fresh blend. The annual extra virgin olive oil is on average 1,500 quintals.

Each production process, from the collection to the kneading, is executed with the expertise and knowledge of Pieralisi Group and its machines. Amongst all, the state-of-the-art Leopard stands out, based on the DMF (decanter multi phase) technology, together with the revolutionary Protoreattore®. Both are equipped with cooling system, whichi allows the complete control of the temperature during treatment.

Today, the company is working towards investing in growing the number of olive trees in the estate. Accademia Olearia Fois is also completely independent energy wise because the energy used is produced through a photovoltaic system. In the same way, heat is generated through combusting the olive core after the treatment.
