PAOLO CASSINI, MILLER FROM THREE GENERATIONS

We are in a little town of the ligurian hinterland, Isolabona in Val Nervia, in the province of Imperia. Here Taggiasca cultivar, the century plant producing a good fruity light oil from a noble history, is cultivated on the very impervious hills.

Paolo Cassini, miller from three generations and grower since longtime tells us his story.

“My grandfather Jean and my father Giannino installed the first mill signed Pieralisi in 1962 with a traditional system of mullers and a presser. In those days we used to work for the locals, there was a good production and we had a lot of work. I remember when I was coming from school, I wanted to work in the mill, so I wore an apron and I filled the frames. These memories are unforgettable as well the smell of olives just milled. To do this job I didn’t continue my studies and in 1992 which was a great year, I took over the mill. In 1993, as agreed with my parents, I installed a new continuous plant, a  washing machine, a new three wheels muller, three kneaders, a Major 2 decanter and two separators; practically a plant with the big P, everything Pieralisi of course!

I’ve always made changes to the plant over the years, in 1998 I added a kneader and I replaced the muller with a crusher reluctantly, in 2001 I bought a new double grill crusher and finally in 2004, to improve the quality of the oil which was already excellent, I modified the decanter to work at two and a half phases.”

The real revolution was in 2008 – continues Paolo Cassini – with a new two phases processing decanter Vanguard 3503. The choice was without any doubt risky but in the end right, we were the first in the province of Imperia to work at two phases also for third party. This led us not to produce waste water anymore, thedamp husk is separated from the kernel and sent to biogas plants.” 

Last modification was in 2014 with five Molinova TG kneaders and a new crusher. “I couldn’t get anything better” – explains Paolo Cassini – “in the last years this plant has brought results. We produced the best ligurian oils like Extremum cru monocultivar Taggiasca which won the first prize at the national competition l’Orciolo d’Oro 2014 and 2015 in the light fruity category and special prize as best light fruity of the guidebook Oil of Italy Gambero Rosso, “great oil” in Slow Food Guide, the only ligurian oil to be rewarded, other “Gran Menzioni” prizes of the International Competition Sol d’Oro, 2003-2005-2008 and 2015 and many other rewards. Among the last ones, the first prize at “L’Ercole Olivario 2016” in the light fruity category and in 2017 the "Gran Menzione" in the category of medium fruity at "The 2nd Trofeo Top Winners" organized by AIPO.

“The oil is done by the tree as well, I prune personally my 1300 trees and I follow the whole production; this helps to improve and understand the oil” – concludes Paolo Cassini.
