These are the words of Víctor Marqués, technical director of Cantine Murviedro, where Pieralisi installed the complete system with the MAMMOTH 3 decanter. We asked him what advantages he has gained since installing this system. We went to visit the plant in the province of Valencia, in Utiel, a small village dedicated to farming and wine making. This small hamlet affords spectacular Mediterranean sunsets along with poetic snowfalls in winter. As Víctor talks to us, we can see it in his eyes that he knows he’s benefited from a great bargain, thanks also to the expertise of Pablo Osorio, the oenologist (one of the most famous in Europe) who helped Pieralisi put together the ideal wine making machine and who worked for Murviedro up until a year ago.
As Jual, part of the Bodega Murviedro team, explained to us, the Complete System is a machine that works well year-round. This is not usually possible with other technologies: you manage to work for one or two months a year, which is why this technology will truly revolutionise the way wine is made. Indeed, he tells us that in their opinion, university students in future will study a harvesting method and a wine-making process of this kind. This system not only doubles and exponentially increases the speed, but it also allows its users to change the type of grape, whereas with other technologies, if you’ve introduced red grapes into the machine, you can’t simply switch to white grapes quickly, with all that entails. Instead, you have to work one week with one particular grape variety, then when you’ve finished, you can start with another variety because you need to devote resources and manpower to cleaning, disinfecting and preparing the machine for a new batch.
Cantine Murviedro is one of the first wineries in Europe to benefit from a fully integrated system. Pieralisi developed a technology that was missing in the sector: using a pneumatic press (a method that is still in force in most wineries across the globe, Ed.) the grape is “harassed”, whereas with Pieralisi’s solution it is massaged instead, so it generates not just large quantities, but the quality is outstanding too.
“We are really happy to be the first winery to rely on a totally integrated system. And we are just as happy and excited about having taken part in this project, to have partnered up with Pieralisi. Gerardo never left throughout the entire grape picking season. That truly is taking care of your customers. If there were any problems, Pieralisi engineers came here directly and that’s what working together among leaders is all about.”
We find Víctor Marqués on our way. He explains firmly and decisively what convinced him to trust Pieralisi.
“The versatility: it is such a versatile machine. It is just the right quality for our product. The decanter, for instance, is one of the best - if not the best - on the market. It allows for sedimentation and fermentation processes that retain all the primary aromas of the grapes, it is easy to use and it makes everyone happy: the producer, the oenologist, the investors, who can think of new production cycles.”
Víctor and Juan are extremely proud of their wines and of their land, just as we are proud of the machine that has enabled them to achieve all this, with skill, passion and dedication.
